Cupcake Carnival: Reese's Peanut Butter Cupcakes

Welcome to the 2012 Cupcake Carnival!

Here is a recipe that I made up & it turned out yummy!
I am all about the peanut butter/chocolate combo this pregnancy, so I thought I would make satisfy my craving with these cupcakes.
Here is what you need for the cupcakes:
Your favorite chocolate cake mix & 24 Reese's miniatures.

Mix cake mix according to package directions.
While you are mixing your cake, have your "helpers" unwrap 24 Reese's PB cups.
Pour your batter into cupcake liners.
Then, take your Reese's PB cups & place them in the middle of the cupcake.
Bake the cupcakes according to your package directions.
***That is what I did when I made these. BUT, while they baked, they fell to the bottom of the cupcake & tasted slightly burnt, so next time I make these, I am going to freeze my PB cups for a few hours before I make the cupcakes & then put in frozen PB cups. I think this will help them not sink!***

While the cupcakes are baking, make your frosting!

Peanut Butter Buttercream Frosting
1 box of powdered sugar
1 stick of butter (at room temperature)
1/4 cup milk
1 tsp vanilla
1/4 cup of Peanut Butter (or 1/3 cup if you really like Peanut Butter)
Reeses mini's for a garnish
These were really good! If you really like peanut butter you could also add some Peanut Butter to your cake mix. And, if you don't have Reese's PB mini's you could always chop up the PB cups & use those as a garnish!

Cupcake Carnival: Cookies & Cream Oreo Cupcakes

Welcome to the Cupcake Carnival!


Here is a new cupcake recipe that I tried out this week.
It actually took me 3 different attempts/combination's to get it just right.
And, the third time was a charm, these cupcakes are GOOD!

Cookies & Cream Oreo Cupcakes

Here is what you need!
For the cupcakes:
A box of white cake mix & a package of Double Stuff Oreos.

Directions:
Make cupcake batter according to package directions. Set aside.
Twist apart 24 Double Stuff Oreos.
Place the wafer with filling on it, filling side up, in the bottom of each paper liner.
(Set aside the other half of the 24 plain wafers....you will use them later for the frosting/garnish!)
I had 3 little helpers organize my Oreo's:
Then, with the remaining FULL Oreos in the package, put them in a ziplock bag & use a rolling pin to crush them up.
(I don't crush them up too finely, I like chunks of Oreo)
Fold in the Oreo pieces into the batter.
(I leave some of the finely crushed Oreo crumbs in the bag to use later as a garnish)

Fill cupcake liners 3/4 full & bake according to cake mix directions.
Once cooked, let fully cool before you add the frosting!
Now, for the frosting:
1 package of Cream Cheese (at room temperature)
1 stick of Butter (at room temperature)
4 cups Powdered Sugar
1/4 cup Whipping Cream (Milk will work if you don't have cream)
1 TBSP vanilla extract
24 Oreo halves (that you set aside earlier)

Mix together the cream cheese, butter, powdered sugar, cream & vanilla with a hand mixer for about 2 minutes.
Frost each cupcake & then sprinkle on some of the Oreo crumbs as garnish.
Once you are about to serve the cupcakes, add the additional Oreo half!
Add the Oreo garnish right before serving (it can get soggy if you add it to early)
Look how fun these cupcakes are! The Oreo at the bottom is my favorite part!
These cupcakes were GOOD!
My Chocolate Chip Cookie Dough Cupcakes are still my favorite, but Kevin likes these Oreo ones better. They taste like Cookies & Cream Ice Cream!

Let's talk Cupcakes.

I have always loved cupcakes.
I am not a fan of cake, but love cupcakes!
The past few weeks, I have had cupcakes on my brain.
Maybe it is the fact that because of Lent & I gave up dessert for 40 days.
But, now Lent is over & I can indulge in all the cupcakes I want!

But, here is the problem. I am in a cupcake rut.
I make the same ones every time, my Chocolate Chip Cookie Dough Cupcakes.

For the past 3 years, I have made these for almost every family birthday, every party I have hosted, Rebecca's bridal shower & Bacherlorette party.
Trust me, these are amazing cupcakes, but it is time to branch out.

Here is where you guys come in!
In December, I hosted the Cookie Recipe Exchange.
It was so fun to have everyone link up their favorite cookie recipes!
There were some awesome recipes that I make all the time now!

So, I decided to host a Cupcake Carnival on May 1st
(in honor of my birthday month & Kevin's birthday month!)
