One of my "Fall traditions" is to make pumpkin bread on October 1st to officially welcome Fall.
Everyone in our family loves Pumpkin Bread.
We also love muffins.
I make some sort of muffin almost every week so that my kids have a quick & some what healthy after school snack.
One of my kids favorite muffins is my Chocolate Chip Banana Muffins, so I wasn't surprised when they asked if I could make Pumpkin Chocolate Chip Muffins.
I took my Pumpkin Bread recipe & tweaked it a bit....

One of my kids favorite muffins is my Chocolate Chip Banana Muffins, so I wasn't surprised when they asked if I could make Pumpkin Chocolate Chip Muffins.
I took my Pumpkin Bread recipe & tweaked it a bit....
Here is what you need:
1 15 oz can canned pumpkin (Libby's is the best...don't stray!)
3 c sugar
(***Note from a reader. You can reduce the sugar to 2.5 cups OR you can use 1 cup sugar & 1.5 cups of applesauce***)
1 c water
1 c vegetable oil
4 eggs
3 1/3 c flour
1 t baking powder
2 t baking soda
1/2 t nutmeg
2 t cinnamon
1 t pumpkin pie spice
3/4 t ground cloves
1 t salt

Directions:
In a large bowl, combine pumpkin, sugar, water, oil & eggs and beat until mixed.
Add flour, baking soda, cinnamon, salt, baking powder, nutmeg, cloves:
Mix with beaters & scrap the sided of the bowl to make sure everything is combined & smooth.
Add the chocolate chips:
Mix well. I use THIS cookie scoop to scoop the batter into cupcake liners!
This recipe makes about 3 dozen muffins
Bake the muffins at 350 for about 18-20 minutes or until a toothpick comes out clean.
This recipe will also make one 9x5 loaf of bread and 18 muffins.
OR two 9x5 loaves.
If you are making it as bread, bake for 60-65 minutes at 350
(until toothpick comes out clean)
(until toothpick comes out clean)
If you are making mini-loaves it makes 7 mini-loaves (bake for 35-40 minutes)

DeleteIn the photo it looks like you added 4 different spices but the recipe indicates only 3. Did you add pumpkin pie spice as well???

DeleteThese look so yummy! 3 cups of sugar seems like a lot, I may substitute half of that with applesauce.
ReplyDeleteI agree that 3 cups of sugar is too much!! I have made her regular pumpkin bread recipe into muffins and put in 1 cup of sugar and 1.5 cups of applesauce. They were great!!

DeleteThe pumpkin recipe I make calls for 1 c sugar, 1/2 dark brown (although I've used golden when I've run out and it turns out just as good), 2 eggs and 1/4 coconut oil, no vegetable oil and no applesauce necessary! I think people are also thinking it's a ton of sugar as my recipe is for 12 muffins and yours is for 18, just a guess? Love the chocolate chips addition, Ghiradelli is good, but I am a Guittard loyal!
ReplyDeleteMy recipe makes about 3 dozen muffins....usually about 32-34 muffins. I've never tried guittard chocolate chips!
