Butternut Squash, Spinach & Goat Cheese Pizza

As you may know.....pizza is my favorite food. 
I could eat it everyday.
Last Christmas I got THIS pizza maker.
(It is also on sale HERE)
We have been making pizza for dinner a few times a month since we got it! 
I have been experimenting with different pizza toppings/recipes and there have been some REALLY good ones!
Once a month I share a new pizza recipe with you.
You don't need the pizza maker (you can use your oven) but I am letting you know that using this pizza maker gives your pizza an authentic pizzeria taste! 
This year, I have been sharing a new pizza recipe every month.
Today's recipe is another one of my favorites....
Butternut Squash, Spinach & Goat Cheese Pizza
Here is what you need:

1 pizza dough (I use pre-made dough from Safeway or Trader Joes.  I like Safeway's better because it so much easier to work with & tastes better! You can make your own dough, but when the pre-made dough is only $1.50, this is a no brainer! 
2 cups cubed butternut squash (1/2-inch pieces.....you can buy this pre cut at the grocery store!)
1 tablespoon plus 1 teaspoon olive oil, divided
1/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1 medium red onion, halved and thinly sliced
1 cups chopped fresh baby spinach
1/2 cup crumbled goat cheese

Directions:
  Toss squash with 1 teaspoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper & sliced onions and put on a baking sheet.

Bake at 400 for 25 minutes, stirring halfway through.... set aside.
While butternut squash & onions are baking,  it's time to roll out your dough.
If using the Pizza maker, I split the dough in half and then roll out your dough on a lightly floured surface & then I put my dough on a piece of parchment paper.  
I cook it on the parchment paper for a few minutes because then I can slide the pizza off the parchment paper without messing up the crust or making all the toppings slide off. I like cooking it without the parchment paper because then it gives the crust a pizzeria taste! If I had a pizza peel, I wouldn't need to have the parchment paper because then I would have the pizza peel to transfer the pizza to and from the pizza cooker...but I don't have one of those yet.
Add a splash of olive oil & dash of pepper to the crust.
 Chop up your spinach.....
 Add the chopped up spinach to the crust:
 Add the butternut squash & red onion mixture on top:
 Sprinkle on the goat cheese......
 YUM. I love goat cheese :)
 Bake in your pizza oven (or regular oven at 450 degrees) for 8-10 minutes 
(I bake mine on parchment paper for 5 minutes & then slide it off the parchment paper & bake it on the pizza stone)
 Slice it up.....
 This pizza is delicious, perfect for the fall & winter months!
 The flavors of butternut squash & goat cheese go so well together.
 This pizza tastes even better with a drizzle of honey on top.....

This & That....and Cyber Monday!


I hope you all had a wonderful Thanksgiving! 
Ours was great...it has been a wonderful week with family.

Saturday I was cheering on my Buffs and so happy THAT we won the Pac 12 South with our win over Utah:
Now we are going to the Pac 12 Championship game THIS Friday!
You better believe Kevin and I are going to THAT game since it's being held at the 49ers stadium! I can't WAIT!!!


We ended our final day of Thanksgiving break eating THIS Coffee Cake & listening to Christmas music:
Not pictured......the 5 loads of laundry THAT I washed & folded. I got a little behind during Thanksgiving break. Ooops!

Now that Thanksgiving is officially over, I am in FULL ON Christmas Mode!

I am 75% done with my Christmas shopping, I have a few more things to get.
