Over the weekend we finally had cooler Fall temperatures, so I went on a baking spree!
I made one of my favorite Fall cookies & I realized I haven't blogged it yet.
I have been making this cookie for the past decade during the Fall season.
I got this recipe online somewhere....before Pinterest & blogs.

Caramel Apple Cider Cookies
Here is what you need:
1 cup butter, softened
1 cup sugar
1/2 teaspoon salt
1 box Apple Cider Instant Original Drink Mix (5 packets)
2 eggs
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 (14 ounce) bag of chewy caramels

Directions:
Cream together butter, sugar, salt and 5 packages of apple cider drink mix powder:
Beat in eggs & vanilla.
Gradually add flour, baking powder, baking soda & cinnamon to butter/egg mixture.

Mix until combined.
Unwrap your caramels....my kids loved this job :)
I use THIS cookie scoop to scoop the dough into balls.
Flatten the cookie dough ball slighlty & add a caramel to the middle:
Wrap the dough around the caramel:
Place on a cookie sheet that is lined with parchment/baking paper.
You line it so that if the caramel leaks, it is easy to clean :)
Cookies filled with caramels? Yes, please.
Bake at 350 degrees for 12-14 minutes.
Do not over bake. I repeat...do not over bake!
These cookies are best when served warm....that way the caramel is nice and gooey:
If you don't serve them right away, I recommend heating them in the microwave for 7-10 seconds before eating them individually so that your caramel is soft.
This recipe makes 2 dozen cookies.
These cookies are delicious with a hot cup of tea.
You can even put your cookie right over your hot cup of tea & the steam will help soften the caramel.
