Slow Cooker Chicken Fajitas

It's no secret that I love my Slow Cooker.
During the school year, I use it at least once a week.
It is so convenient to use on busy days when you need to get dinner on the table!
This is one of my favorite Slow Cooker meals.
We love Mexican food in our house....especially fajitas.
But, fajitas can take a lot of time to prep.....on school nights we are busy with homework & other after school activities, so I try and minimize my prep for dinner.
Slow Cooker Chicken Fajitas have become a favorite & so easy to prep!
 Here is what you need:
- 3 or 4 Chicken Breasts
- Bell Peppers (I use 1 red, 1 yellow, 1 orange & 1 green)
- 1 onion
-2 limes
- 1 packet of Fajita seasoning

Directions:
Chop your bell peppers into strips. Aren't they so pretty? It's fun to eat the rainbow! 
Slice your onion...this is the hardest part for me, my eyes are SO sensitive to onions!

 Place half your bell pepper strips & half of your onions at the bottom of your crock pot:

On top of that, place your chicken breasts:
Pour half of the fajita seasoning on top of the chicken breasts:
Cut your limes in half and squeeze the lime juice of 1 lime on top of the chicken breasts:
Flip over your chicken breasts and sprinkle the rest of the fajita seasoning on the chicken & the juice of the 2nd lime:
Add the rest of the peppers & onions:
Cook on high for 3 hours (or low for 5-6 hours)

Remove the chicken breasts:
Slice up the chicken breasts:
Put the chicken back into the crock pot & stir. Cook for another 15 minutes:
Now your fajitas are ready to serve! Place on tortilla (we use flour)
Here are toppings that we like on fajitas:
Cheese,  sour cream, fresh salsa & guacamole are our favorite toppings for fajitas:
Yum, Yum, Yum.
This is the only way that I make chicken fajitas. So easy & healthy.

    2. Yes, that's the only liquid :) Bell Peppers (and onions) are watery vegetables, so that causes liquid to release as they cook!
