Toffee Chocolate Chip Cookies

 Today, May 15th is National Chocolate Chip Cookie Day!
In honor of that, the past few years, I have shared some of my favorite Chocolate Chip Cookie recipes.
I am excited to share this recipe with you, it is based off my Sea Salt Chocolate Chip Cookies, but I added Toffee/Heath Bar bits to the recipe. They turned out so good, so I knew I needed to blog it!
 Here is what you need:
1 cup butter (softened)
1 cup dark brown sugar (for this recipe, I use dark brown sugar, but you can use light)
¾ cup sugar
2 eggs
1 T vanilla
¾ t baking soda
1 t baking powder
1 t salt
3 cups flour
1 package Chocolate Chips (we like milk chocolate)
1 package of toffee bits (I use heath bar bits that have chocolate in them) 
Directions:
Cream butter and sugars. Add eggs and vanilla. 
Stir until combined.



Add dry ingredients & Mix in chocolate chips and toffee chips.
Now would be a good time to have a bite of dough to make sure it's okay ;)
 Use a cookie scoop (THIS is the one I have)
Place onto a cookie sheet:
Sprinkle with Sea Salt:
Bake at 350 for 10-11 minutes.
These cookies are so delicious...the toffee & the sea salt go so well together.

Soft & Chewy Oatmeal Raisin Cookies

This past weekend our court had a get together to watch the first game of the Warriors playoffs.
Whenever we have a court potluck or court party, I am the token "dessert" person. 
I decided to make 2 types of cookies...Oatmeal Raisin and I also made Toffee Chocolate Chip Cookies. Neither of these recipes are on my blog....until now!
These Soft & Chewy Oatmeal Raisin Cookies are adapted from Grammy's Oatmeal Cookie recipe :)
Here is what you need:
2 sticks of butter, softened to room temperature
1/2 cup white sugar
1 cup brown sugar
2 eggs
1 T vanilla
1 1/2 cups flour
1 1/2 t baking soda
1 t cinnamon
1/2 t cloves
1/2 t salt
3 cups oats
1 cup raisins

Directions:
Soak raisins in hot water for 10 minutes (while you make the dough) 
Soaking the raisins helps them be more plump & juicy in the cookies!
In large bowl, cream together butter, white sugar, and brown sugar until smooth. 

Beat in the eggs and vanilla until fluffy. 
 
Add the flour, baking soda, cinnamon, cloves & salt and stir into the sugar mixture:
Stir in oats and raisins. 
I use this cookie scoop whenever I make cookies (or muffins!)

Drop onto cookie sheets. 

Using a cookie scoop is so much easier to proportion out your cookies.
 
 Bake in a 350 degree oven for 10 to 12 minutes until light and golden. 

Cool on a wire rack for at least 10 minutes.
 
Makes 3 dozen cookies.
These cookies got gobbled up by our neighbors.
You gotta love a classic soft & chewy Oatmeal Raisin cookie! 

 Store  the extras in airtight container after they have cooled :)

Patriotic Chocolate Chip Cookies

4th of July is one of my favorite days of the year.
Chocolate Chip Cookies are one of my favorite treats to make!
I saw Red, White and Blue M&M's at Target, so I knew I had to buy some.
I put some out in a bowl for decoration (and to eat!) and I knew I wanted to use some of the m&m's to make cookies.
Introducing.....
Patriotic Chocolate Chip Cookies
Here is what you need:
  1 cup butter (softened)
1 cup brown sugar
¾ cup sugar
2 eggs
1 T vanilla
¾ t baking soda
1 t salt
3 cups flour
1 package  Chocolate Chips
1 cup of Red, White and Blue M&M's

Directions:
Cream butter and sugars. Add eggs and vanilla. 
Stir until combined.
Add dry ingredients & Mix in chocolate chips and M&M's.
I found the 4th of July M&M's at Target, but if you can't find them there or if they are sold out, you can get them HERE. If you have Prime, they will arrive by Sunday :)
M&M's make everything better :)
After you have mixed all the ingredients,  use a cookie scoop to form the cookies.
THIS is the cookie scoop I have
Drop onto a cookie sheet....It makes the prettiest cookie dough :)
 Bake at 350 for 11-12 minutes.
These cookies are so soft & delicious.
Let cookies cool slightly...
This recipe makes about 3 dozen cookies.
You need these cookies for your 4th of July party!
If you are a cookie snob like me, you will love these cookies!
YUM.
You cold also make these into Ice Cream Cookie sandwiches....add some vanilla ice cream in between 2 cookies and then roll them in 4th of July Sprinkles and you have a Patriotic Cookie Ice Cream Sandwich!

Carmelitas {Chocolate Chip Caramel Cookie Bars}

Did you know that today, May 15th is National Chocolate Chip Cookie Day?
In honor of that, the past few years, I have shared some of my favorite Chocolate Chip Cookie recipes. 
Today, I wanted to share my very favorite Chocolate Chip Cookie Bar recipe, called Carmelitas.....
They are loaded with oatmeal, brown sugar, caramel & lots of chocolate chips.

Here is what you need:

For the Crust:
2 cups flour
2 cups Quaker oats
1 1/2 cups brown sugar
1 tsp baking soda
1 tsp salt
1 cup butter, melted

For the Topping:
1 package chocolate chips (I like milk chocolate, you can use semi sweet)
1 cup chopped pecans or walnuts (I use pecans)
1 cup caramel topping


Add oatmeal, flour, brown sugar, baking soda & salt  in a bowl.

Pour in the 1 cup (2 sticks) of melted butter:

Stir until all the ingredients are coated & mixed together:

Press 3/4 of the mixture into the bottom of a 9X13 pan:


Luke likes to help me make these. One of his rescue bots guys was checking out our work :)

Bake the crust at 350 for 7-8 minutes & remove from oven. The crust should be light brown:

While the crust is baking, get your topping ingredients ready:

Sprinkle with chocolate chips and nuts:

Drizzle about 1 cup of caramel over chocolate chips and nuts:

Sprinkle with remaining crumbs of crust mixture.

Then, I drizzle more caramel over the top:

Bake 15-20 minutes at 350, until golden brown.

After you take these out of the oven, have them cool on the counter for a few minutes and then chill in a refrigerator for 2 hours.
 Then, cut into bars & serve!

Some of my friends have referred to these Carmelitas as "Chocolate Chip Caramel Crack Bars"
 They are SOOOO good and SOOO addicting!
* If you don't like pecans/nuts then you don't have to use them for this recipe, you can omit them*

 One reason I love making these is because they are delicious AND they are perfect to serve at parties or bring to an event!
