Peppermint Ice Cream Cake

Are you ready to get a recipe to one of the yummiest & easiest desserts out there?
This recipe is courtesy of my awesome mother-in-law.
PEPPERMINT ICE CREAM CAKE

She makes this every Christmas for dessert.
She gave me the recipe when Kevin & I first got married and now I make it during the Christmas season when I am asked to bring a dessert because I LOVE anything peppermint/chocolate.
Here is what you need:
1/2 gallon of Peppermint Ice Cream
Package of Oreos (you will use the entire package)
1/3 cup butter
1 jar Fudge Topping
Candy Canes for garnish

Step 1:
Put Oreos in a gallon ziplock bag
Crush cookies with a rolling pin.
Yum.
Next, take the butter and chop it up into pieces.
Put the crushed cookies & butter in a bowl. Take off your rings & use your hands to mix it all together. Your hands will be quite messy...but it's worth it!
Press into a 9x13 pan & freeze for 30 minutes.
After 15 minutes, take out the carton of ice cream & let it soften for about 15 minutes.
Then, take out the dish & spread the ice cream over the cookie mixture.
I glop it onto the mixture in clumps.
Then I use a spatula to smooth it out.
Ta-da! Now freeze for 3 hours.
After it has been in the freezer for 2-3 hours, take it out & put the fudge on.
I microwave the fudge for about a minute & then pour it on.
Spread the fudge evenly over the ice cream. Put back in freezer for at least another hour.
I take the cake out about 5-10 minutes before I serve it. I also crush up some candy canes in a ziplock bag & use them to garnish the cake.
This dessert is so yummy and chocolately. It is a family favorite!
It is a great dessert to make because you can make it ahead of time.
I brought it to our court Christmas party & made it the night before. So easy!
The best part about this cake is that you can make it year round with other types of ice cream.
One of my other favorites is using coffee ice cream or mint chip ice cream (and, instead of candy canes as a garnish, you can just garnish with chopped nuts, some whip cream or more Oreo's!)
It truly is the most lovely & delicious Christmas dessert!

  7. OMG. That sounds incredible. Peppermint ice cream is my absolute favorite! But since I'm from Texas, I'm partial to Bluebell's peppermint ice cream. (If you ever find somewhere that sells it, you must try it!)
