Salted Caramel Brownies

When Kevin and I got married, at one of my bridal showers the hostess had everyone who attended bring a recipe card with their favorite recipe on it & then the hostess gave them to me in a recipe binder.
That present is one of my most cherished gifts and some of those recipes have become some of our family's favorite recipes.
One of the recipes given to me was Caramel Brownies. I made them all the time when we first got married and then I forgot about the recipe until last year. Since then, I have tweaked the recipe a bit to make it just perfect and I am so excited to share it with you!
 Salted Caramel Brownies

 Here is what you need:
- 1 box of chocolate cake mix
- 1 stick of butter, melted
-1 package of chocolate chips (I use milk chocolate chips)
-1 (10oz)  package of caramels
- 1 cup of evaporated milk, divided
- 1 T of Sea Salt

Directions:
Pour cake mix into a bowl & stir in melted butter & 2/3 cups of evaporated milk.
 Batter will be thick.

Spread  3/4 of the batter into an 11x7 pan (I spray with cooking spray)
Bake at 350 for 15 minutes.

While it's baking, unwrap all the caramels (my kids loved doing this)
Heat the caramels, 1/3 cup of evaporated milk & 1 T of sea salt in a sauce pan over low heat.
 Stir constantly until melted:
When the brownie is done baking, take them out of the oven & then add the bag of chocolate chips over the brownie:
Then, pour the caramel mixture over the chocolate chips:
Sprinkle some more sea salt on top of the caramel:
Drop remaining brownie batter over the caramel mixture:
Bake at 350 for an additional 20-25 minutes:
After brownies have cooled (about an hour) cut them into squares...
 These are SO delicious!
I have made them 4 times in the past month & I am making them again this weekend for our court Christmas party.
They are the perfect dessert. Brownies? Good. Salted Caramel. Good.
The original recipe didn't call for sea salt, but I started adding it in because salted caramel is SO good :)
My family begs me to make these... I hope you love these Salted Caramel Brownies as much as we do!
Enjoy!

  2. These look awesome! Do you think I could use a brownie mix instead of a cake mix?

    1. Hi Sara! I think you could use a brownie mix if you followed the brownie mix directions. If you do that, don't add the butter to the mix.

  3. Hi Mel- Do you think I can get away with using La Lechera caramel instead of having to melt down the individual caramels? I've never baked with it- just used as a topping. Thoughts?

    1. I have never used that brand of caramel before, so I don't know how it would turn out. You could try it....if you do, let me know how it works!

  4. Does this call for 2 Tablespoons of salt in caramel? That seems like too much. Just checking before I try. Looks delicious!
