Christmas Sprinkle Sugar Cookies

Did you know that yesterday was National Cookie Day?
Luke's favorite cookie are my Sprinkle Sugar Cookies and the past week he has been asking if we could make them. I thought it would be fun to make them with Christmas Sprinkles, so in honor of National Cookie Day, I thought I would share this version with you guys!


 Here is what you need:
 3/4 cup butter, at room temperature ( 1 1/2 sticks of butter)
1 cup  sugar
1 egg, plus 1 yolk
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
1 (3.4 ounce packet instant vanilla pudding mix)
2 cups flour
1/4 cup sprinkles, plus additional sprinkles for rolling
Directions:
Mix the softened butter and sugar on medium speed for 2 minutes. 
***Tip: I keep 1-2 vanilla beans in my sugar container. It makes the sugar have a nice vanilla flavor. I have been doing this for almost 10 years. I replace the vanilla beans every year or so.***
Add in the egg, vanilla, baking soda and salt. Mix until combined.
Add the dry pudding mix:
Mix on low for about 1 minute:
Add in the 2 cups of flour and mix for 2-3 minutes on low until combined.
Now, it's SPRINKLE TIME!
 Mix in 1/4 cup sprinkles:
We love the non-perils Sprinkles, but you can use any type of sprinkle you want.
Chill the dough in the fridge for 1 hour.
After your dough has been chilled, use a cookie scoop to make balls of dough & roll them after you scoop them.
THIS is the cookie scoop I use.
These are Luke's favorite cookies & he really likes sprinkles, so after I scoop the cookies into balls, I roll them in MORE sprinkles!
You can never have too many Sprinkles :)
 Bake at 350 for 10-11 minutes:
These cookies are SO soft & delicious!
This recipe makes 2 dozen cookies.
They are so easy to make if you are looking for a sugar cookie during the holiday season, but don't want to make roll out sugar cookies.

  1. Just a quick comment to let you know that two of your recommends have changed my life! The Breville pizza oven is the bomb! We make pizza twice a week in it. Also the Instant Pot came and I have made dinner in it three nights in a row. Thanks and keep up the good recommends!
