Cowboy Salad

I am so excited to share one of my VERY favorite summer recipes with you.
I can't believe I haven't shared this with you before.
I have been making this recipe for about 10 years & it's a staple for us during the summer months.
It's also one of my go-to salads when I need to bring something to a party.
I got this recipe from one of my bridal showers when the host had everyone bring a recipe card with their favorite recipe on it to my shower.
It is so fresh & healthy!
We call it....
Cowboy Salad
 (but I have also heard people refer to it as Cowboy Caviar)
Here is what you need:
2 cans of white corn, drained
1 can black eyed peas, drained
1 can black beans, drained
5 or 6 Roma tomatoes, chopped
4 avocados, chopped
1 red onion, chopped (I buy the pre-chopped onions)
1 green bell pepper, chopped
1 bunch of cilantro, chopped (Mine is from my garden!)
Juice from 4 limes
Salt & Pepper to taste

 
Directions:
 Rinse and drain the black eye peas...

 Rinse & Drain the Black beans....

And, Rinse & Drain the 2 cans of white corn....

Add to a large bowl:

Chop up the green bell pepper:
Chop the tomatoes:

Chop up the cilantro:

Add the chopped bell pepper, tomatoes, cilantro and red onion to the bowl:
Stir everything together:
Once you are ready to serve, chop up the avocado & put on top:
Then squeeze the juice of 4 limes on top of the avocados:
Add some salt & pepper to taste and stir everything together:
This salad is so refreshing! You can serve it as a side salad or you can serve it with tortilla chips as a dip:
This is a perfect salad/dip to bring to BBQ's or parties this summer!

  1. YUM! I love this salad!!!! My mom makes it, but she uses salad dressing instead of lime juice & adds red bell pepper instead of green. I want to try your version without the dressing. Looks so refreshing.

  8. This sounds great!! Any idea how long it keeps in the fridge? I'm the only one in our little family who loves cold salads like this, so I would need it to stay fresh for a few days in the fridge! I'm thinking leave off the avocado and lime juice and just add those separately for each portion and maybe the rest would stay good in the fridge for a few days maybe?

  9. Sounds delish!! We have a similar one where we use a can of Ro-tel instead. Which makes is super fast but yours is fresher and now I want some!!
