I am so excited to share with you one of my favorite cookies to make during the Fall.
During the months of October & November, these are my go-to cookie.
Perfect for the Halloween & Thanksgiving Holidays.
Whenever I bake, I make a mess on my counter. Especially when I am dipping cookies in a sugar mixture. If you know me, you know I am a germaphobe & I don't like sponges. I always use Clorox disinfecting wipes to clean up my kitchen counters & bathroom counters.
That's why I was thrilled when Clorox & BlogHer asked me to be a part of this Clorox Spread Prevention During the Holidays campaign. It is a product I use & love.
Here is what you need:- 2 sticks of butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup pumpkin puree
- 1 egg
- 2 teaspoons vanilla extract
- 3 3/4 cups flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
For the coating:
- 1/2 cups granulated sugar
- 1 1/2 teaspoon ground cinnamon
In the bowl of an electric mixer, beat together the butter and sugars on medium-high speed until light and fluffy, about 2 to 3 minutes. Stir in the pumpkin puree, then beat in the egg and vanilla.
In a separate medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg.
With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. Stir until fully incorporated.
Cover and chill the dough for at least an hour.

Use a cookie scoop or a spoon to make cookie balls.
Line baking sheets with parchment paper or silicone liner.
Set cookies on cookie sheet.
Place in cinnamon sugar mixture:
Roll to coat the entire cookie ball:Line baking sheets with parchment paper or silicone liner.
Set cookies on cookie sheet.
Bake the cookies at 350 degrees for 12 to 14 minutes, or until baked through.

I stay healthy by using my Essential Oils (so much nicer, more organic, and cheaper than regular meds). Being a teacher I'm around germs so much, so I also use hand sanitizer like it's going out of style. And I teach my students each year to "Be a superhero. Save the world from your germs." (cover your nose/mouth when coughing and sneezing) :)

ReplyDeleteI do a few things. One is I make sure I am hydrated and have a humidifier going in the house when it is dry . Another is that I am washing my hands and i have hand sanitizer. I also take probiotics and also try to get exercise each day.
ReplyDeleteRegular hand washing is one of the easiest ways to stay healthy. During the holiday season, I have to remind myself to get plenty of sleep. There's so much to be done, but I won't be able to enjoy the fun parts of the holiday season if I'm tired and run down.
ReplyDeleteI go on the offensive, and make many healthy recipes to share. I make sure that I bring more than is expected, and save recipes all year for new ones to share. It serves the purpose of helping people see that healthy doesn't mean boring or plain, too. I stay on a regular schedule for exercise and rest. I also say no to some things, so I don't try to be all things to everyone.

ReplyDeleteI've really been conscious of when I'm full or hungry and when I'm just eating out of boredom. As long as I eat healthy most of the time, I allow myself to enjoy the holidays and not to eat until I'm stuffed. I also try to be as active as possible. :)

I try to eat clean all year so I'm mentally prepared to only have small treats and I don't gain weight because I know my goal - being fit and healthy. It's hard to cheat if you are driven by who you want to look and feel like - an image of the best,you and if you work hard on this goal, you will likely not want to cheat. I try to bring clean recipes to parties and enjoy people more than food. It's hard though.

With two kids under three we don't always stay healthy! We do our best by getting flu shots, washing our hands all the time and is on hand sanitizer. I also have a pack of disinfecting wipes in the diaper bag that I use on the shopping cart handle and the high chairs at restaurants which seem like germ factories.

With toddlers and adults in the house for the holidays, I make sure everyone washes hands a lot! In addition, at night before I go to bed, I disinfect all common areas like countertops, sinks and handles to doors and knobs.
