Caramelized Onion, Goat Cheese & Pancetta Pizza

As you may know.....pizza is my favorite food. 
I could eat it everyday.
  At Christmas I got THIS pizza maker.

We have been making pizza for dinner a few times a month since we got it! 
I have been experimenting with different pizza toppings/recipes and there have been some REALLY good ones!
Once a month I am going to share a new pizza recipe with you.
You don't need the pizza maker (you can use your oven) but I am letting you know that using this pizza maker gives your pizza an authentic pizzeria taste! 
I am planning on sharing a new pizza recipe every month.

Today's recipe is another one of my favorites...it's truly divine!

 Caramelized Onion, Goat Cheese & Pancetta Pizza
Here is what you need:
- Pizza Dough (I use pre-made dough from Safeway or Trader Joes.  I like Safeway's better because it so much easier to work with & tastes better! You can make your own dough, but when the pre-made dough is only $1.50, this is a no brainer!
- Olive Oil
- Sweet Onion, sliced & caramelized
- Fresh Mozzarella Cheese
- Goat Cheese
-Pancetta (or prosciutto)

Directions:
If you use pre made dough, I keep the dough in the bag for 30 minutes at room temperature.
While you are waiting for the dough, make your caramelized onions. 
Slice the onions & put in a pan with some olive oil:
Cook over medium heat until they are browned:
If using the Pizza maker, I split the dough in half and then roll out your dough on a lightly floured surface & then I put my dough on a piece of parchment paper. 
I cook it on the parchment paper for a few minutes because then I can slide the pizza off the parchment paper without messing up the crust or making all the toppings slide off. I like cooking it without the parchment paper because then it gives the crust a pizzeria taste! If I had a pizza peel, I wouldn't need to have the parchment paper because then I would have the pizza peel to transfer the pizza to and from the pizza cooker...but I don't have one of those yet.

 Spread a light layer of olive oil on the dough:
 Add slices of fresh mozzarella:
 Sprinkle some pancetta:
 Add some caramelized onions:
 Sprinkle on some goat cheese:
Bake in your pizza oven (or regular oven at 450 degrees) for 8-10 minutes 
(I bake mine on parchment paper for 5 minutes & then slide it off the parchment paper & bake it on the pizza stone)
 This pizza is full of amazing flavors
The sweetness of the onions, saltiness of the pancetta & the creaminess of the goat cheese.
 Goat cheese on pizza is a match made in heaven :)
You could easily make this vegetarian by leaving off the pancetta.
You can also swap out the pancetta for prosciutto if you prefer!

What We've been up to.....
 September was a busy month!
It started out with Claire's Flamingo Pool Party:
 Every weekend since then has been soccer, soccer, soccer!
 Last weekend we went to the Luke Bryan concert with our neighbors.

So much fun!

What I'm Dreading.....
 The Election season....UGH!!!!!
 Don't like any of them.
One of my friends texted this to me after the debates:
 It totally made me laugh!

What I'm Working On.....
Grading, grading, grading!
Our quarter is almost over (can't believe it!)
So, I have tons of tests to grade & enter this week!
Gotta love the #teacherlife

 Two fun trips planned in the next few weeks!

This past week was the start of the Fall 2016 Premieres, so I have been watching several shows!

I have several recipes that I make every fall.
Like I have mentioned, here in California, I don't consider the Fall season starting until October 1st.
Every October 1st, I celebrate the beginning of Fall by making Pumpkin Bread.
