Pepperoni, Pineapple & Jalapeño Pizza + A Winner!

As you may know.....pizza is my favorite food.
I could eat it everyday.
At Christmas I got THIS pizza maker.
(It is also on sale HERE)
We have been making pizza for dinner a few times a month since we got it!
I have been experimenting with different pizza toppings/recipes and there have been some REALLY good ones!
Once a month I am going to share a new pizza recipe with you.
You don't need the pizza maker (you can use your oven) but I am letting you know that using this pizza maker gives your pizza an authentic pizzeria taste!
I am planning on sharing a new pizza recipe the last Friday of each month in honor of Friday Night Pizza Night that we have every Friday night at our house :)

Today, I am excited to share my:
Pepperoni, Pineapple & Jalapeño Pizza
This pizza combination is inspired by my neighbors.
Our neighbors all hang out often, especially on Friday & Saturday nights when the weather is nice.
A few years ago, when we were all hanging out in the court on a Friday night playing Cornhole, we were getting our pizza orders organized. One of my neighbors was ordering a Pepperoni, Pineapple & Jalapeño Pizza. I was like "WHAT?!?" That sounds AMAZING.
3 of my favorite pizza toppings put together!!
When it got delivered, it was love at first bite and it quickly became my new favorite type of pizza.
So, whenever we order pizza, this is my go-to (I still order my kids cheese because that is what they like)

I knew that once I got my pizza maker, I had to make a Pepperoni, Pineapple & Jalapeño Pizza.
Here is what you need:
-
- Pizza Dough (I use pre-made dough from Safeway or Trader Joes.  I like Safeway's better because it so much easier to work with & tastes better! But, it was sold out this week, so I used Trader Joe's. You can make your own dough, but when the pre-made dough is only $1.50, this is a no brainer!)
- Pizza Sauce
-Mozzarella Cheese
-Pepperoni
-  Jalapeños (I use fresh Jalapeños, but you can use pre-sliced ones in the jar)
- Pineapple chunks (You can use the ones in the can, but I love the ones from Trader Joe's, you can find this bag in the freezer section. I also use them for smoothies)
If using the Pizza maker, I split the dough in half and then roll out your dough on a lightly floured surface:
Then I put my dough on a piece of parchment paper.
(I cook it on the parchment paper for a few minutes because then I can slide the pizza off the parchment paper without messing up the crust or making all the toppings slide off. I like cooking it without the parchment paper because then it gives the crust a pizzeria taste! If I had a pizza peel, I wouldn't need to have the parchment paper because then I would have the pizza peel to transfer the pizza to and from the pizza cooker...but I don't have one of those yet.)
Add pizza sauce:
Sprinkle on some mozzarella cheese:
Layer on Pepperoni:
Slice up your jalapeño:
Add the jalapeño slices:
Add pineapple chunks:
Sprinkle more mozzarella cheese on top:
Bake in your pizza oven (or regular oven at 450 degrees) for 8-10 minutes
(I bake mine on parchment paper for 5 minutes & then slide it off the parchment paper & bake it on the pizza stone)
This pizza is sweet, savory & spicy!
If you don't like it as spicy, you can use the "tamed" jalapenos in jars.
Whenever I order this pizza from a pizza place, I always order a side of ranch to dip the pizza in...that also cuts back on the spicyness of the jalapenos.
I am a Ranch dressing snob (I only like Ranch dressing that has been made fresh, I cant stand bottled or jarred Ranch dresssing)  My favorite homemade Ranch recipe is HERE.
Let me know if you try this pizza combo, it is my FAVORITE! :)

 What I'm Reminiscing about.....
College!
This month marked 15 years since I graduated from The University of Colorado...GO BUFFS!
I dug up some old photos...so fun to reminisce!
I loved college....so fun!

 What I'm loving.....
I'm loving using Rodan + Fields Reverse. It got rid of my pregnancy melasma & also gets rid of age spots/sun damage.

Here's what a fellow R + F consultant, Destiny, has to say about her experience with Rodan and Fields.

"I'm so pleased with how far my skin has come and can't wait to keep going! The only makeup I'm wearing in these pics is a little mascara... nothing on my face. I've stopped using foundation/ concealer completely!! I've primarily been a twice daily REVERSE regimen and eye cream user, plus AMP MD every other day! After my first REVERSE regimen was completed, I started incorporating UNBLEMISH into my morning routine to clear up some sporadic breakouts and help with oily skin. I LOVE both of these regimens and my happy balance is a combination of the two! Skin can be complicated and luckily, Rodan + Fields has something for everyone!"

Want the best skin of your life? Let's get started today! Love the skin you're in!What is your biggest skin concern? I'm here to help! Take this quick survey to find out what is best for your skin HERE.

I wanted to let you know about my Rodan + Fields special for the month of May.

What We've been up to.....
May has been a BUSY month.
The first weekend of May we had our school auction (Caddyshack theme)
We had my niece's 2nd Birthday Party (Minnie Mouse theme)
We celebrated Mothers Day with both sets of parents on Saturday night & watched the Kentucky Derby and played Mexican Train until 2 am!
The weekend after that I was in Lake Tahoe for my Rodan + Fields retreat:
This past weekend we were at my niece's college graduation.
Add all that to the end of the school year craziness & it's just been BUSY!

What I'm Dreading.....
The stack of homework packets, tests & projects on my desk at school.
I have TONS of grading to get done this week.

What I'm Working On.....
I am working on end of teacher gifts!
I was at Anthro last week and saw that my favorite initial mugs were on sale for just $5!
I stocked up on them and got one for the girls speech teacher, PE teacher, music teacher, librarian, reading teacher, school nurse & office staff.
I made a FREE printable a couple years ago that is perfect for these mugs!
 You can download it {HERE}

That is the gift I am giving all the support staff.
I am giving the girls teachers a gift card to their favorite restaurants....
and putting it on THIS printable.

What I'm Excited About.....
 SUMMER!!!!
2.5 more weeks of school....we can do it, Teacher Friends!

What I'm Watching........
Warriors Playoffs...UGH...they have lost the past 2 games.
Last week for Kevin's Birthday we went to game 2...it was AWESOME.
The Warriors won that game, it was so fun...I don't know what has happened since then!

TV shows I am watching...
Grey's Anatomy (just finished the season finale last night...!!!)

 The Bachelorette
I think it's going to be a good season!

What I’m doing this weekend.....
It's Memorial Day Weekend & it's also my birthday on Monday!

Love that my birthday falls on a 3 day weekend & I don't have to go to school on my birthday :)
We might have a block party depending on the weather & if the Warriors are playing.
