Pesto Pasta Salad

During the Summer, my meal planning is easy.
Almost every night, we BBQ (Chicken, Salmon, Tri-Tip, Chicken Apple Sausages) and I serve it with a veggie (corn on the cob, zucchinni or squash) and a side salad (usually some sort of  Pasta salad)

I made this salad last week & had it on my 10 on 10 post, and I promised to share it with you. It's one of our favorites and healthy!

 Here is what you need:

 - 1 box of Bow Tie Pasta
- 4 cups of fresh spinach
- 1 cup of Pinenuts
- Diced Red Onion
- 1 container of crumbled Feta Cheese
- 1 container of Pesto

Directions:
Cook & Drain your pasta according to package directions.
 Add pasta to a large salad bowl. Add in pinenuts, diced red onion, crumbled feta cheese & pesto:
 Add the fresh spinach on top...
 And give everything a big stir!
 Cover and chill in your fridge for 4-6 hours (or overnight)
This salad tastes even better if you make it the day before.
 This salad makes a big batch, so it's good for a party or it's a good salad to have throughout the week as lunch or as a side dish with your dinner.
It's SO easy to make. And, it's healthy. 
If you are gluten free, you can easily use gluten free pasta.
