I have a treat for you today!
This is another one of my go-to Summer Salad recipes.
It is perfect to bring along to a BBQ or pool party.
It is SO fresh & healthy...it screams summertime!
When Kevin & I got married, for one of my bridal showers, the guests brought a recipe card with one of their favorite recipes on it & they complied the recipes in a cookbook for me...It's seriously one of my most treasured items. This recipe was in it, but it was called "Fruit Salsa" and it called for diced fresh mangos as well. I am not a fan of mangos...when I eat them, they make my toungue itchy...anyone else?!?!
So, I tweaked this recipe a bit!
Here is what you need:

So, I tweaked this recipe a bit!
Here is what you need:
- 1/2 large seedless Watermelon, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
-1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- 2 fresh jalapenos, diced
- Diced red onion (I use the pre-diced because my eyes are sensitive to onions)
- juice of 3 limes
- bunch of fresh cilantro, chopped
- White corn tortilla chips....Scoops are PERFECT for this salsa!
Directions:
Chop up your watermelon. I use 1/2 a large watermelon for this recipe & I chop up the other half & store it for snacking :)
I put on latex gloves & seed the jalapenos...
Chop up the jalapenos (if you don't like spicy, you can leave these out)
Seed & Chop up your bell peppers....
Put in a big bowl along with the diced red onion. It's so pretty:
Juice the 3 limes over the bowl:
Chop up a handful of cilantro & give the bowl a big stir:
We like using Scoops...they hold a lot of this salsa :)

Watermelon salsa is the best! Pioneer Woman has a similar recipe. So delicious and fresh - perfect for summer!
