Corn Dip

Need a last minute appetizer to bring to a Superbowl Party on Sunday?
(Or, do you just want a yummy dip recipe?)
Look no further! Mel is hooking you up!

This is one of my favorite dips! It is SO EASY to make! And, it is delicious.
My sisters and I have been making it for years, we got the recipe from a family friend.
Since then, it has been a staple at family functions & parties! I made it for my school staff last year & people went crazy for it! It was gone by 10 am!
In fact, I am bringing it to a Superbowl/Birthday Party on Sunday!
I LOVE me some football and Corn Dip!

Here is what you need:
2 cans of corn, drained
1 (7 oz) can of green chilies
1 (4oz) can of diced jalapenos
1 cup sour cream
1 cup mayo
5 green onions, chopped
1/4 teaspoon garlic powder
2 cups of grated Mexican blend cheese

**Note: I use low fat versions of the sour cream & mayo & it doesn't compromise the flavor. Just don't use fat free...that stuff is NASTY!

Here are the directions for CORN DIP!
(It may be one of the easiest dips that you will ever make!)
1. Drain the corn.
2. Put drained corn in a mixing bowl:
3. Dice up your green onions:
4. Add the green onions, can of green chilies & jalapenos to the bowl:
5. Add 1/4 teaspoon garlic powder, 1 cup sour cream & 1 cup of mayo to the bowl.
(if you know me, you know that mayo GROSSES me out big time. I can barely look at. I can eat things with mayo mixed in them, but I cannot stand mayo plain, it makes me gag...anyone else feel the same way about mayo?!?!)
6. Stir everything together.
7. Add 2 cups of Mexican blend cheese:
8. Stir in the cheese:
9. Cover your bowl & refrigerate the dip OVERNIGHT.
(this really allows the flavors to blend & the most crucial step in making this dip!!)
10. The next day.....Serve with Fritos Scoops chips!
Yum!
You may think this dip is a weird combo of ingredients, but TRUST ME! It is a crowd pleaser!
I was skeptical the first time I saw it...wasn't sure if I wanted to try it.
I was like...corn? in a dip? what?
But...I am SO glad I did! You will be too!
So, go to the store so you can make this dip for your Superbowl Party, you have 36 hours (give or take) until kick off!

    I'm with you on mayo, it makes me gag on its own. BLECH.

  5. I am with you on the mayo thing and I have another corn dip that is even easier and I am sure just as yummy!

    Cream Cheese Dip
    1 small can sliced mushrooms
    1 stick of butter
    2 8oz pkgs cream cheese
    1 can whole corn-do not drain
    1 small can green chilies

    In a small sauce pan melt butter and add mushrooms. Lightly sauté mushrooms until browned. Melt cream cheese into mushroom and butter mixture. Once melted add corn with juice and green chilies and stir together. Serve warm with tostado chips.

    Hubby likes it with mushrooms I prefer without- either way DELISH. I can eat a whole bowl myself!

  9. I feel the same way about mayo. It grosses me out. I had a bad experience with it as a child...what can I put in place of the mayo to make this recipe work? It looks delicious! Thanks.
