Pepperoni, Pineapple & Jalapeño Pizza + A Winner!

As you may know.....pizza is my favorite food. 
I could eat it everyday.
  At Christmas I got THIS pizza maker.

We have been making pizza for dinner a few times a month since we got it! 
I have been experimenting with different pizza toppings/recipes and there have been some REALLY good ones!
Once a month I am going to share a new pizza recipe with you.
You don't need the pizza maker (you can use your oven) but I am letting you know that using this pizza maker gives your pizza an authentic pizzeria taste! 
I am planning on sharing a new pizza recipe the last Friday of each month in honor of Friday Night Pizza Night that we have every Friday night at our house :)

Today, I am excited to share my:
Pepperoni, Pineapple & Jalapeño Pizza
This pizza combination is inspired by my neighbors.
Our neighbors all hang out often, especially on Friday & Saturday nights when the weather is nice.
A few years ago, when we were all hanging out in the court on a Friday night playing Cornhole, we were getting our pizza orders organized. One of my neighbors was ordering a Pepperoni, Pineapple & Jalapeño Pizza. I was like "WHAT?!?" That sounds AMAZING.

When it got delivered, it was love at first bite and it quickly became my new favorite type of pizza.
So, whenever we order pizza, this is my go-to (I still order my kids cheese because that is what they like)

I knew that once I got my pizza maker, I had to make a Pepperoni, Pineapple & Jalapeño Pizza.
Here is what you need:
-
- Pizza Dough (I use pre-made dough from Safeway or Trader Joes.  I like Safeway's better because it so much easier to work with & tastes better! But, it was sold out this week, so I used Trader Joe's. You can make your own dough, but when the pre-made dough is only $1.50, this is a no brainer!)
- Pizza Sauce
-Mozzarella Cheese
-Pepperoni 
-  Jalapeños (I use fresh Jalapeños, but you can use pre-sliced ones in the jar)
- Pineapple chunks (You can use the ones in the can, but I love the ones from Trader Joe's, you can find this bag in the freezer section. I also use them for smoothies)
If using the Pizza maker, I split the dough in half and then roll out your dough on a lightly floured surface:
Then I put my dough on a piece of parchment paper.  
(I cook it on the parchment paper for a few minutes because then I can slide the pizza off the parchment paper without messing up the crust or making all the toppings slide off. I like cooking it without the parchment paper because then it gives the crust a pizzeria taste! If I had a pizza peel, I wouldn't need to have the parchment paper because then I would have the pizza peel to transfer the pizza to and from the pizza cooker...but I don't have one of those yet.)
Add pizza sauce:
Sprinkle on some mozzarella cheese:
Layer on Pepperoni:
Slice up your jalapeño:
Add the jalapeño slices:
Add pineapple chunks:
Sprinkle more mozzarella cheese on top:
Bake in your pizza oven (or regular oven at 450 degrees) for 8-10 minutes 
(I bake mine on parchment paper for 5 minutes & then slide it off the parchment paper & bake it on the pizza stone)
This pizza is sweet, savory & spicy!
If you don't like it as spicy, you can use the "tamed" jalapenos in jars.
Whenever I order this pizza from a pizza place, I always order a side of ranch to dip the pizza in...that also cuts back on the spicyness of the jalapenos.
I am a Ranch dressing snob (I only like Ranch dressing that has been made fresh, I cant stand bottled or jarred Ranch dresssing)  My favorite homemade Ranch recipe is HERE.

  2. Yum! I have a pizza stone but have never used it! I noticed you use parchment paper, do I have to use that on the stone?
