Zucchini & Squash Boats

Like I mentioned last week, our garden is doing great and I have zucchini & squash coming out my ears! I have been looking for ideas for recipes that include zucchini & squash and a reader mentioned zucchini boats. Great idea! I decided to do my own spin on them. They were delicious!
And, if you are looking for a low carb alternative, this is for you!
 Here is what you need:
 - 1 lb of Ground Turkey (I use Jenni-O brand)
- 4 or 5 zucchini or squash
- 1 jar of pasta sauce
- 1 can of diced tomatoes
- 1 Tablespoon of Minced Garlic
- 1 Tablespoon of Italian Seasoning
- Mozzerella Cheese
-Parmesan Cheese

Directions:
Take your ground turkey & sprinkle it with the minced garlic & Italian Seasoning
Get it all cooked up & drain the fat (there won't be much fat at all)
 Once your meat is cooked, add the jar of pasta sauce & diced tomatoes to the pan:
I also chopped up some basil from my garden because why not?!
 Let your sauce simmer on low for  15-20 minutes:
While your sauce is simmering, it's time to cut up your zucchini & squash.
  Slice them the long way, like so:
 Then scoop out the insides:
 Lay them on a cookie sheet (I also use parchment paper or my Silpat). I use a cookie sheet that has edges so they don't roll off!
 Fill each "boat" with sauce:
 Yum.
 Sprinkle some Parmeasan on them:
 Then cover them with Mozzeralla cheese:
 Now they are ready to go in the oven!
 Bake at 350 for 10-12 minutes
This makes enough sauce to make 14 zucchini/squash boats.
I made 8 last week & then froze the sauce and made more this week.

I originally made these so that I could have them for lunches. I wasn't sure if Kevin like them.
 He tried one with dinner and LOVED them!
You can eat them with a fork & knife or you can eat them like a piece of pizza :)
These were seriously SO good.
 I am so excited to have another recipe that uses zucchini or squash! 
And, if you are looking for a low carb meal, these are perfect. 
I am a carb junkie, but I really loved them.
2 of them were super filling!

  2. Just today my dad brought over 3 big yellow squash and I already have a few shredded in my freezer so I may need to give these a try. They look yummy!
