Instant Pot Spicy Shredded Pork Tacos

One of my favorite recipes to make is PW's Spicy Dr. Pepper Shredded Pork.
I first had it about 5 years ago when I was pregnant with Luke and I hosted my first Pioneer Woman Potluck Party.
I was about 38 weeks pregnant with Luke & was hoping that the spicy shredded tacos would put me into labor. No such luck. My body doesn't know how to go into labor on it's own, I was induced with all 3 kids :)

As you know, I am obsessed with my Instant Pot and I want to convert all my favorite slow cooker recipes to instant pot recipes. PW's Spicy Dr. Pepper Shredded pork recipe is a recipe where you cook it in your oven at 300 for 6 hours. I never make it that way, I would always make it in my crock pot and cook it on slow for 6 hours because I am a little leery about having my oven on for 6 hours if I'm not home.
The other week, I decided it was time to convert it to an Instant Pot recipe.
The ingredients from her recipe stay the same, I just adjusted a few things and of course I had to adjust the cooking time to an Instant Pot.
Making it in the Instant Pot turned out perfect....less than an hour instead of 6 hours.
YES!!!!! 

Here is what you need:

1 Pork Shoulder (also called pork butt) anywhere from 4-6 pounds. Bone in is fine.
Salt & Pepper, to taste
1 whole onion, cut into chunks
1 can (11 Ounce) Chipotle Peppers In Adobo Sauce
1 1/2 cups Dr. Pepper
2 Tablespoons Brown Sugar

Directions:
Trim the fat off your pork.
Then cut the pork into 4 or 5 big sections.
Place the pork in your Instant Pot.

Add some salt & pepper to the pork.

Cut up your onion into chunks & put the onions in your Instant Pot.
 
Add the can of Chipotle Peppers In Adobo Sauce (these are spicy!) & the brown sugar:
 Add in the Dr. Pepper:
 Give it a big stir:
 Then put the lid on your Instant Pot turn the knob to SEALING:

 Turn to high on manual setting and cook for 45 minutes.
 When time is up, let it do a natural release for 15 minutes. If there steam left, do a manual release.
Open the lid and this is what it will look like.....
 The pork will be falling apart, so you can fork shred it. You can do this while it's in the Instant Pot or take out the pork or fork shred it on a cutting board and then put the pork back with the liquid.
Give the shredded pork a big stir and keep it in with the liquid for 15-20 minutes before you serve it.
 There is A LOT of liquid, so before you get ready to serve the pork, separate the meat from the liquid and discard the liquid.

Now get ready to assemble your shredded pork tacos!
Add some shredded pork to a tortilla.
Then add your favorite toppings..we love avocado, sour cream & salsa:
 Add some shredded cheese:
Add shredded lettuce & fresh cilantro:

 These are spicy shredded pork tacos is one of my favorite meals.
This pork would be good on nachos, as a sandwich or even as a taco salad.
It makes so much, so it is perfect for a big crowd....perfect for Cinco de Mayo next Friday.
 And now it is so much easier & quicker to make in an Instant Pot!

  3. We LOVE that recipe, too! It's worth the 6 hours in the oven... turns out better than the crockpot... another reason I need an Instant Pot!
