My 3rd Annual Crocktober Crock Pot Recipe Link Up!
This is always one of my favorite link ups!
I LOVE my Crock Pot.
As a working mom, my Crock Pot is a staple during the Fall & Winter months.
They make my life & dinner time so much easier!
Can I get an Amen?
I am SO excited to share this recipe with you.
This is a recipe I have been making for about 3-4 years
(I can't believe I haven't shared it on here yet!)
It has a different flavor than most of my recipes that I make.
I promise you it is delicious and SO, SO EASY.
Here is what you need:
- Crock Pot/Slow Cooker
- 1 bag frozen Chicken Tenderloins or Chicken Breasts (I Use a 2.5 lb or 3 lb bag)
- 2 cans of Chick Peas/Garbanzo Beans, drained
- 1 large can of diced tomatoes
- 1 jar of Thai Yellow Curry Sauce
***I always use Trader Joe's brand, but if you don't have a Trader Joe's near you, you can check your grocery store. I know that Kikoman makes one & so does Taste of Thai & Thai Kitchen. Check the Ethnic Food Isle. Or you can make your own. You just need 1 (15 oz) can coconut milk & 1 T yellow curry paste. Pour into a sauce pan. Bring to a boil stirring frequently. Reduce heat and cook 3-4 minutes or until thickened. (That is what I did before I discovered the pre-made sauces)***
Directions:
Add your frozen chicken tenderloins, can of dice tomatoes & both cans of drained chick peas/garbonzo beans.
Pour Sauce over the ingredients.
Put on lid. Cook on high for 4 hours or low for 6 hours.
When it is done cooking, just shred up your chicken.
Stir.
That.is.it.
SO dang Easy.
I serve over rice.
Sometimes white rice, sometimes brown rice. Whatever one I have on hand.
This meal is packed full of flavor. Kevin always told me he didn't like curry or the curry flavor.
I make this meal about once a month in the fall/winter. He LOVES this meal.
It was just last month that I confessed & told him that he does like curry because there is a jar of yellow curry in this meal :)

ReplyDeleteYour crockpot chicken with rice, rotel, beans, etc. is one of my all-time fave meals!! My husband can't eat poultry (it's insanity, I tell you!) so I make it EVERYTIME I bring a meal for a friend, and keep some aside for me ;).

ReplyDeleteMy favorite things to make in the crockpot are applesauce and chicken stock. Applesauce is easy, just roughly chop apples (no peeling!) and sprinkle with cinnanom (I also with grate some fresh nutmeg if I have some) add a bit of water to cover the bottom and leave it be! So chunky and delicious, with no added sugar.

ReplyDeleteI made your recipe for dinner last night and it was delicious! This will definitely be one to keep in our regular rotation. I wanted to add some additional veggies, so I added in about 2 cups of cauliflower florets in for the last 2 hours and they paired really well with everything else.
