I got them to make one of our favorite pasta dishes. I swear, the bell peppers from the Farmers Market have much more flavor than the ones from the grocery store!
"Colorful Bowtie Alfredo"
1 lb boneless, skinless chicken breasts
(sometimes I use chicken breast tenders, about 10 of them)
1 box Bowtie Pasta
1 cup reserved chicken broth
1/3 cup of butter
2 cups half and half
1 cup grated Parmesan cheese
1 tbsp butter
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
6 leaves fresh basil, chopped
It serves 6-8 people.
Directions:
Place chicken, water & chicken broth in a large pot and cover. Bring to a boil and simmer over medium heat for 20 mins until chicken is done. Remove chicken to a cutting board and let sit until cool enough to handle, then cut into bite sized pieces. Strain the broth and save 1 cup (for the sauce) You can either toss the chicken broth, but I put it back in the pot with a little more water & use that to boil the noodles with (it gives the bowtie noodles tons of flavor!) Boil bowtie noodles for 1o mins (or according to pkg instructions).
While the chicken is cooking, slice bell peppers into matchsticks.
In a small saucepan, heat the 1/2 cup reserved chicken broth and 3 tbsp butter over medium heat until the butter is melted.
Add 2 cups half and half, 1 clove minced garlic, and 1/2 tsp salt and pepper, each. Stir to combine, then slowly whisk in the 1 cup grated Parmesan cheese. Let simmer, whisking occasionally.
Add in chopped chicken and season with salt and pepper. Stir to combine flavors. Turn heat down to low and pour the cream sauce over the chicken and bell peppers.
I then add the alfredo/bell pepper/chicken to a large pot with the drained bowtie noodles.
Mix it all together. Chop up some fresh basil and add it to the top of your dish!
Serve & Enjoy!
